Ingredients

  • Rapeseed oil
  • 2 green peppers
  • 125 g spring onion (or use leek instead if you prefer it)
  • Some red chilli(s) like turkish pepper
  • 3 garlic cloved
  • 450 g chicken thigh fillet
  • 3 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chinese soja
  • 1 tablespoon grated fresh ginger
  • 1 dl salted peanuts

Prep

  • Clean out and cut the peppers into small bits.
  • Cut the spring onion/leek into similar size.
  • Cut the chilli into thin rings.
  • Cut the garlic into thin rings.
  • Cut the chicken into strips.

Steps

  1. Fry the chicken in very hot oil in a wok pan. Take up and save for later.
  2. Fry peppers, spring onion/leek, chilli and garlic a few minutes the same way. Take up.
  3. Add hoisin sauce, rice vinegar, soy sauce and ginger, bring to heat and add the chicken to finish it up.
  4. Mix in the ingredients from step 2 as well as the peanuts.
  5. Serve with jasmine rice and some extra veg if you have.
  6. Enjoy!
