Ingredients
- Rapeseed oil
- 2 green peppers
- 125 g spring onion (or use leek instead if you prefer it)
- Some red chilli(s) like turkish pepper
- 3 garlic cloved
- 450 g chicken thigh fillet
- 3 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chinese soja
- 1 tablespoon grated fresh ginger
- 1 dl salted peanuts
Prep
- Clean out and cut the peppers into small bits.
- Cut the spring onion/leek into similar size.
- Cut the chilli into thin rings.
- Cut the garlic into thin rings.
- Cut the chicken into strips.
Steps
- Fry the chicken in very hot oil in a wok pan. Take up and save for later.
- Fry peppers, spring onion/leek, chilli and garlic a few minutes the same way. Take up.
- Add hoisin sauce, rice vinegar, soy sauce and ginger, bring to heat and add the chicken to finish it up.
- Mix in the ingredients from step 2 as well as the peanuts.
- Serve with jasmine rice and some extra veg if you have.
